The most popular combination at the shop is the Tuscan Herb Olive Oil infused with oregano, rosemary, marjoram, and garlic. Mix that with a balsamic vinegar aged for 18 years, and voila! Your taste buds are forever changed.
Some other pairings that we love: Roasted Almond Olive Oil with Cinnamon Pear Vinegar, Garlic Olive Oil with Pomegranate Vinegar, or Chipotle Olive Oil with Tangerine Vinegar.

Olivaceto is open Tuesday through Thursday from 11am to 6pm, Friday and Saturday from 10am to 5pm, and Sunday from 11am to 5pm.
Prices range from $4.99 to $29.99 for a bottle of extra virgin olive oil depending on type and size. A bottle of truffle oil ranges from $7.99 to $69.99.
Josie Rivas-Garcia and her wife, Lucy Rivas-Garcia, were driving through Maine one winter when they noticed an olive oil and vinegar tasting bar that entirely charmed the couple.
They thought, “why not?!”
Now the two are proud co-owners of Olivaceto. They named the shop by combining the Italian words for olive and vinegar. But that’s not where the combinations end.
The unique combination of flavors in the artisan olive oils along with the unexpected infusion of sweet crushed fruits into high-end balsamic vinegar is something that the couple admits surprises people at first.
