Chef Dong wakes up at 5am every morning to be first in line at the fish market where he only buys the highest quality options. He has an expert eye, having learned his sushi-making skills from a Japanese chef just after he arrived in New York City from China at the age of 20.
He spent years perfecting the craft before coming to Chicago to open his own restaurant where he mixes his traditional sushi skills with a Latin flavor.
It’s all in the details at Sushi Ukai where the wasabi is prepared fresh from the root.
Try the Chicago Fire Roll with spicy tuna and rolled with seaweed in fire and ponzu sauce or the Sweet Heart Roll with spicy tuna, avocado, crunch crumbs, and topped with more tuna and a honey sauce.
Sushi Ukai is open Monday through Friday from 11am to 10pm, Saturday 11:30am to 10pm, and Sunday from noon to 9:30pm.
Breakfast entrees served with organic, farm-fresh eggs are about $15. Try the SantaA signature sushi roll such as the Ukai Roll (with spicy tuna, scallop, opa, tobiko and topped with gold flakes and the special chef sauce) is about $19.
Chef Dong has dreamed of a sushi restaurant all his own, and now he has Sushi Ukai in La Grange as well as two other locations in Wheaton and Glen Ellyn!
“Ukai” comes from the name of the traditional method of catching small fish in Japan using seabirds.
The Sushi Ukai in La Grange is just a two-minute walk from the La Grange Road stop on the BNSF Railway. Located at 120 B West Calendar, the restaurant is just a 25-minute drive from downtown Chicago.
