The founder of this global franchise thoroughly studied ramen in Japan before opening his own shop with the goal of providing delicious, affordable noodles for the working class.
A bowl of noodles here starts with the deboning of the pork. Then it is flattened, shaped, rolled, and bundled to create a uniform mixture of fat and lean meat before the rolled pork is put in a barrel containing a kyuramen marinade. After three hours of halogenation, the meat spends two hours air drying before it is vacuum packed and put in ice water.
After that, the meat spends a night in the refrigerator and a day in the freezer to entice the pork roast to undergo thermal expansion and contraction, guaranteeing a perfect slice of chashu.
